Pierre Herme has a passion. The pastry chef has used the theme of dark chocolate and taken it to new heights whether in the form of a macaron, cookie, cake or bonbon. His golden rule is to bring out the pure, natural taste of each of the Grand Crus and Pure Origin chocolates he selects. It’s almost a fetish and he admits to ‘an immoderate attraction for this capricious ingredient’. He enjoys taming chocolate, it’s his plaything, and all his chocolates have a highly enhanced flavour because he just won’t mistreat that cocoa bean.
What better way to kick off chocolate week then with a flashback to the launch of Pierre’s latest boutique back in November last year, where he brought his Parisian gourmet experience to 38 Monmouth Street, Covent Garden, London WC2. Nestling amongst the great and good of Seven Dials, his second stand alone store, the original being found in Lowndes Street SW1 is the perfect place to satisfy your sweet tooth this week. You can also find a concession in Selfridges, Oxford Street if you prefer.
